I'm a yogi with a BIG appetite, sweet tooth, and passion for wellness and these easy pancakes are not only freakin' delicious, but good for you too. While I don't shy away from treating myself to gluten and sugar or really anything, I do try my best to maintain a healthy balance when it comes to my eating habits. I treat myself pretty regularly 😁. I also firmly believe that living your healthiest, best life means not depriving yourself what you love; so when I can easily "health-ify" something like pancakes, I will. I do find that many healthy food alternatives can be complicated to make, have weird ingredients, or the recipes are misleading and really not that great. I usually have pretty bad luck when it comes to using recipes from a blog which is why I was so excited when I found this no-fuss pancake recipe on Fit Foodie Finds. It was the perfect low maintainence meal for me because of the quick prep time...did I mention I get notoriously hangry?Because I could not actually open the website and read all the directions I totally winged it and they still came out amazing.
Here's how I modified the recipe:
1 ripened banana
1/4 cup of almond flour
1/2 tsp of baking power
1 tsp vanilla
1/2 tsp of cinnamon
Mash banana. Crack eggs. Mix wet ingredients. Mix dry ingredients. Then mix the wet and dry ingredients together. Melt coconut oil or butter or whatever you like to use these days in a pan. Cook over medium heat until browned on each side. Simple. As. That. You can't mess up pancakes too bad right???
Makes 3-6 pancakes depending on how big you like em. In my case, I found it MUCH easier to make smaller pancakes and keep them on the thin side. Top them off with whatever you like. I had mine with mixed berries, Siggi's vanilla yogurt, and obviously maple syrup.
